Mung-bean pancake — Pyongyang roots, market stall crunch, rainy-day cousin of pajeon.
Soak, grind, fry hot
Soak skinned mung beans, grind with a little water into a coarse batter, fold in chopped kimchi or sprouts and scallion. Fry thick in generous oil until the edges glass. Dip soy-vinegar. Gwangjang Market sells this by the slab — home versions can be thinner and still honest.
