Korea is small enough to cross in a day and varied enough that a stew tastes different at each end. The grid below is arranged roughly north-to-south, west-to-east. Tap a region for the long version. The short version: west is abundant, east is salty, mountains are starchy, the island is pork and sea, and Seoul eats all of it.

Do not rank regions. Use the accent column to choose: tired of heat, go Chungcheong; want the loudest table, Gyeongsang; want the fullest table, Jeolla. Then cook the linked page when you get home so the trip has a second life.
FAQ
Which Korean region has the best food?
Jeolla has the reputation — Jeonju is a UNESCO City of Gastronomy — because its rice basin historically supported lavish banchan. But “best” depends on your palate: Gyeongsang is saltier and spicier, Chungcheong milder, Jeju built on pork and seafood.
Is Busan food spicier than Seoul food?
Generally yes. Gyeongsang cooking, including Busan and Daegu, is described as saltier and more direct with chili than Seoul’s milder, court-influenced seasoning. Busan also adds a strong seafood and wheat-noodle (milmyeon) accent.
What is Jeju food known for?
Black pork (heuk-dwaeji) grilled with salt, hairtail (galchi) stew or grill, sea urchin seaweed soup, and haenyeo-dived seafood. Chili is used less than on the mainland.
