설렁탕
Seolleongtang (설렁탕)
Milky ox-bone broth — all-day simmer, salt at the table, kimchi on the side.
White means long simmer
Blanch bones, rinse, then simmer hours until the broth turns opaque. Slice brisket thin if you use it. Salt and pepper live at the table so each bowl stays custom. Eat with radish kimchi 깍두기, not a chili dump in the pot. This is Seoul’s quiet prestige soup.
Abroad
Buy frozen bone packs if butchers shrug. Pressure-cooker shortcuts work for opacity; taste still wants time. Do not confuse with spicy 육개장 — different grammar.
