Jjamppong (짬뽕)
Spicy seafood noodle soup — Korean-Chinese heat with a red, oily broth.
Fry the chili in oil
Bloom gochugaru (and a little chili oil) with onion and seafood trimmings before the stock hits the pan — that is where the red smell comes from. Soft cabbage, then noodles last so they do not swell into mush. Jjamppong is not Japanese champon; it is louder and oilier.
