Buy, don’t stuff, the first time
순대 is pork intestine stuffed with blood, glass noodles, and grain. Home stuffing is a weekend project. Abroad, buy it frozen at a Korean grocer, steam 10–15 minutes, slice, and dip in salt + gochugaru or ssamjang. The soup version 순대국 is the same slices in a milky bone broth with salted shrimp on the side.
