Salt and the peninsula

Sea salt, jang, and why “bland soup” is a seasoning error, not a style.

Salt is a process

Korean salt is often sea salt. Jang and kimchi are how salt becomes flavor over months. Undervsalted doenjang jjigae tastes like dishwater; oversalted kimchi never ferments into crunch. Taste the paste, then the pot.
