Potato pancake — Gangwon’s answer to a rainy evening.

Grate, squeeze a little

Grate potato, pour off some water but keep the white starch that settles — that is the binder. Salt, spread thin, fry until the edges glass. Dip in soy-vinegar. No flour required if the potato is starchy.
