How Xanthan Gum works 잔탄검
Xanthan gum is a polysaccharide made by bacterial fermentation. Its long chains tangle in water to build viscosity, and they thin under shear, which is why a gel toner feels thick in the bottle and spreads easily on skin. The same chains dry into a light film that slows water loss slightly. That film is also what pills when a formula is overloaded or layered under sunscreen. Blending it with a second gum or a carbomer is the usual way formulators buy body without that slippery drag.
