Sodium cocoyl glutamate is an anionic surfactant built from coconut-derived fatty acids and the amino acid glutamic acid. Its molecules surround oils so they can be rinsed away, but they are milder toward skin proteins and lipids than sulfates, and the class works at a pH close to skin's own rather than the high pH of true soap. That combination is why an amino acid cleanser leaves less of the tight, squeaky feeling.
